Valcalepio red

Valcalepio Rosso DOC is made from grapes of Cabernet Sauvignon vines in percentages varying from 25 to 60 percent and, for the remainder, from Merlot. The grapes are vinified in purity, that is, harvested and fermented separately: this way of proceeding allows the two individual varieties to be harvested at their maximum degree of phenolic ripeness, Cabernet Sauvignon and Merlot in fact have two different ripening periods and are harvested a couple of weeks apart. Bordeaux cold-cutting is then carried out in the percentages that are indicated by the production specifications. This stage is followed by aging lasting at least twelve months, of which at least six months are in oak barrels. When the wine ages for more than three years, it can carry the Riserva designation. Also important for the final quality of the product is bottle aging, one to two years, which softens the tannic character of the Merlot and Cabernet Sauvignon and gives the wine its sensory complexity. It is ruby red in color, more or less deep, with reflections tending toward garnet. The nose offers an ethereal, intense and pleasant aroma. The flavor is dry, full, persistent and harmonious and reminiscent of black cherry. The minimum total alcohol content is 11.5 degrees. Red Valcalepio accompanies roast game dishes, but it also goes well with red and white meats. The ideal temperature for serving it is 18 C°.
