The Andezeno thistle is ivory white in colour with narrow, jagged, spiny and very tender leaves.
The edible parts of the thistle are tender, crunchy, sweet and highly digestible. They are about 70% of the entire plant and are used in many recipes. The taste is slightly bitterish.
