Piedmontese flavours: the Brutti ma Buoni ( Brut and Bon )

Brût e Bon, also known as "Brût ma Bon", in Italian "Brutti e/ma Buoni", are dry, irregularly shaped pastries. The ingredients, which can vary depending on the area, are almonds and/or hazelnuts, caster sugar, egg white and vanilla. Sometimes they can be flavoured with cinnamon and/or covered with chocolate. They are produced all year round. The biscuits can be kept for a few months, if kept at a temperature below 20°C.
