The territory of Gavi is not only famous for its wine, but also for several typical Piedmontese products. Not everyone knows, for example, that it was here, not in Genoa, that a traditional dish was born and then very popular in Liguria: the raviolo.
The birth of this fresh filled pasta is linked to the history of the family that gave it its name, the Raviolo family, who lived in this area. The Raviolo family prepared this thin pasta filled with goat cheese and herbs and cooked it in broth. They later moved to Genoa and the ravioli became known as coming from Gavi.
Today, Gaviolo ravioli is a De.Co (communal denomination) product and its recipe is jealously guarded by a confraternity, the Obertengo Order of the Knights of Raviolo and Gaviche, which has been promoting it for over 40 years.
