Canestrello novese is a dry biscuit produced by hand in the bakeries and pastry shops of the Novese and Ovese areas, based on an ancient recipe. It has a ring or doughnut shape and weighs a few dozen grams. It has the colour of toasted bread and a fragrant sweet scent given by the wine and olive oil.
The ingredients are: wheat flour, olive oil, white wine from Gavi, baking powder, sugar and salt.
It is produced all year round. The origins of Canestrelli Novesi are very remote. The name "Canestrello" probably derives from the typical woven wicker containers, called "canestri", in which the sweets were placed after baking.
