The cialledda is made with stale Matera bread and is also a typical dish from nearby Puglia. A cheap and quick dish with a rustic and classic flavour.
It was the breakfast of the workers in the fields and for this reason it is also called "breakfast of the reaper".
A typical summer dish fresh, nutritious and genuine made with stale bread, tomatoes, onion and oregano, in the basic version, but can be enriched with caroselli or cucumbers, olives and celery. In addition to the cold version, there is also the hot cialledda, a dish usually prepared in winter evenings made with stale bread and seasonal vegetables, such as turnip greens.
