Zonzelle also known as Donzelle or Ficattole are a type of fried dough typical of Tuscany: flour, salt, yeast and water. These four ingredients are enough to make bread, pasta, pizza and in Tuscany also coccoli, ficattole or donzelle, simple fragments of bread dough fried in hot oil, crispy outside and soft inside. The donzelle, also called zonzelle in the Florentine area and coccoli in the Chianti area are a real street food, simple to make, easy to eat even standing up and very very appetizing and generally accompanied by cold cuts and cheeses.
