Tripe of Moncalieri

The tripa ‘d Moncalé is a typical sausage produced throughout Piedmont, but particularly in the area of Moncalieri from which it takes its name. The sausage, of medieval origin, is prepared with parts of the pig’s stomach and eaten as an appetizer.
