Tirulën is a biscuit with a bitter sweet taste. The ingredients used for its preparation are: 00 flour, sugar, milk, butter, chopped hazelnuts, baking powder, grated lemon peel. The Tirulën takes its name from the fact that in ancient times, after having prepared the dough, the little dumplings were "torn", "pulled off".
Since 1970, the "Sagra del Tirulën e del Barbera" (Festival of Tirulën and Barbera) has been organised in Isola d’Asti and the biscuit has therefore become the town’s traditional dessert.
