The Salentine friselle

Friselle Salentine ( Frise ) are one of the most loved summer meals by the people of Puglia; a dry product to be soaked in water and then seasoned with olive oil and tomatoes, it is kneaded with brewer’s yeast or sourdough. Prepared still today with the same wise procedure, frise can be served at dinner or even as an aperitif.
