The crocché palermitane are tasty potato croquettes, prepared without eggs, which traditionally go in the mafalde (a typical soft and light bread) together with the famous panelle, made with chickpea flour. Bread, panelle and crocché are in fact the classic street food of Palermo, prepared in the thousands of fryers present on every street corner.
The right potatoes to use are the "old potatoes", drier and with a lot of starch.
