The Bobici Window

From the eighteenth century, the Habsburg city of Trieste owes its growth to immigration from the Balkans and Central Europe. This inevitably led to a strong influence on its culinary tradition, which was represented by dishes belonging to the Mediterranean cuisine (Istrian, Dalmatian, Greek and Sephardic Jews) and the Central European one (Austrian, Slovak, Hungarian, Bohemian and Ashkenazi Jewish dishes). Since the annexation of Trieste to Italy, there has been a continuous growth of the typical Trieste cuisine that introduced new foods and dishes. The bobici soup (corn soup) is a typical dish of the area of Carso and it is of Slavic origin. This recipe, of peasant origin, owes its name to the ingredient that characterizes it: the kernels of corn, or bobici. Bobici soup is traditionally prepared with corn cobs and fresh borlotti beans.
