Description

The Pian di Rocca artichoke is an intense green colour, tending towards purple, with a conical shape and a tender consistency. It is very small and compact, has a bitterish taste and is more resistant to cold than other crops.
Propagation is by cuttings: the suckers, called "carducci", are taken from the best mother plants and then transplanted.
To plant the artichoke beds, light ploughing is carried out, followed by fertilisation, two milling operations and subsequent assolcatura. The small size of this artichoke makes it particularly suitable for preparation in oil.
