Strucolo in straza is one of the most typical cakes of the Karst in Trieste, Istria and Gorizia. It is a particular type of strudel (strucolo in the Karst dialect), prepared with leavened dough, wrapped in a cloth (straza in Trieste) and cooked in boiling water. strucolo is filled with apples, cherries or other seasonal fruit and is the relative of the strudel from Trieste.
