Sicily is famous for its rotisseries… fragrant panelle, crunchy arancine, tasty paper wrappers and hearty rizzuole are popular all over the world. Frying is a real passion for all southerners and parties are the right time to do it, without feeling too guilty! One of these delicacies is certainly represented by the Sicilian Sfinci: soft pancakes of leavened dough of Palermo origin that are prepared in San Giuseppe, on March 19, stuffed with ricotta cream, chocolate chips and decorated with chopped pistachios, cherries and candied orange peel and raisin nuggets! From the Latin "spongia" which means sponge, these little sweets owe their name to their irregular round shape and irresistible softness. Thanks to a sprinkling of caster sugar, they become so delicious that one of them pulls the other… in moderation! Like all popular recipes, there are several variations, some of which include the addition of boiled potatoes in the dough.
