Sicilian Cooking: La Frittola

The frittola (frittula in Sicilian) is a set of veal offal, grassetti, small cartilages, boiled and then browned in lard. While still hot it is placed in a basket and covered with a dishcloth. The "Il Frittolaro" at each request will take a handful with his hand and serve it in a bit of greaseproof paper or inside a soft sandwich.
