The scarpaccia, a typical dish from the province of Lucca whose recipe is equally claimed by Viareggio and Camaiore. The base of this dish is: a thick and consistent zucchini omelette, with a name that does it absolutely no justice. But then, when it comes time to put on the condiments, the roads diverge. In Camaiore, the scarpaccia is savoury, with spring onions and basil; in Viareggio it is sweet with pumpkin flowers and flour. Two versions and a great excuse to visit both towns and decide which one you like best.
