Salsiccia e Friarielli is a typical Neapolitan dish that no family in Campania has ever given up. We’ve found it on sandwiches, on top of pizza, and in many other renditions. Salsiccia e friarielli is part of our culture, the vegetable is from the broccoli family, and cooking is the flowers and leaves of the turnip greens, usually in more than generous quantities. The friarielli, boiled, drained and sautéed, or simply wilted in a pan with garlic, oil and a bit of forte, are a divine accompaniment to sausages, also cooked in a pan.
