Salted anchovies

Preserving anchovies in salt is one of the oldest methods of preserving fish. The anchovies are cleaned and salted in order to preserve them at room temperature, in glass jars, even for two or three years. Typical are the salted anchovies of Liguria. They are whole, eviscerated and without the head with an abundant layer of coarse salt on the skin.
