The most famous salami – or, to be more precise, the sausage – in the Ferrara tradition? Obviously the salama da sugo! A dish based on pork meat (in various fatty and lean cuts, such as capocollo, guanciale, etc.), mixed and enriched with wine, salt, pepper and spices, and finally enclosed in a pork gut bladder, which is then closed with a string and left to mature for months.
A dish with a very strong flavour, which is at its best when served with mashed potatoes.
