The dogfish, or catfish, is an animal resembling a small shark, typical of Sardinian waters. Usually cooked in a stew with vinegar and tomato sauce or with sweet and sour sauce accompanied by walnuts and parsley, the origins of this appetizer are poor.
Today, however, it is a delicacy offered in many luxurious and refined restaurants. There are many variations for the preparation of the dish, many of them based on specific recipes known and kept by local fishermen.
