The wine growers in Cyprus are lucky; there is no phylloxera on the island so no grafting on American rootstock is necessary.
The grapes are picked very ripe, even overripe, and thus very rich in sugar. They are then dried in the sun for one or two weeks to further increase the sugar content. Then, the grapes are pressed and the must undergoes a slow and long fermentation, often during 2-3 months. Sometimes the winemaker fortifies it with grape spirit, but it is not mandatory. The wine is aged in oak barrels for at least two years. The alcohol content of the finished wine is usually around 15%. According to the regulations, however, the alcohol may reach 20%.

The wine&#039;s fame has even caught the attention of historical figures; it is said that Richard the Lionheart praised this wine during his wedding in Cyprus, calling it the &quot;wine of kings and the king of wines.&quot; Produced in the region around Kolossi Castle, Commandaria has earned its status as a wine deeply rooted in the island&#039;s history and culture. The Ondarrabi Zuri white grape variety is the main one used to produce Getaria txakoli. Txakolí is a young, fruity white wine with moderate alcohol content (9.5º-11.5º). Pale yellow in colour, with intense citrus, herb and flower aromas, fresh, slightly acidic and very easy to drink, txakolí is at its best when served cool out the fridge and from a height to release its flavours as it splashes into the glass.
30 years ago, txakoli was considered a vulgar drink, acidic, uninteresting. But now it is one of the great ambassadors of Basque cuisine. A white wine, sophisticated, with irresistible freshness which dazzles the most demanding of diners. A tour of the wineries of Aia, Zarautz, Hondarribia and Getaria, the towns in Gipuzkoa that produce the most txakoli, will reveal the secrets of this young and fruity wine. 

It was originally produced by artisanal means in the local farmhouses, and a number of existing documents demonstrate that it has been used for trading purposes in Gipuzkoa since at least the early 16th centuTxakoli winery. The grape is harvested in late September or early October, when it is perfectly mature and the sugar/acidity ratio is just right.

It is excellent with fish and seafood. We also recommend that you try it with salted anchovies and white tuna in oil, the aperitifs served by the producers of Txakolí de Getaria.</description>

Due to the drying of the wood its current capacity is 219,000 litres (57,854 U.S. gallons). One hundred and thirty oak trees were reputedly used in its construction. 
It has only rarely been used as a wine barrel, and in fact presently enjoys more use as a tourist attraction, and also as a dance floor since one was constructed on top of the tun.  A staircase allows visitors to climb atop the barrel for a quick dance!</description>

An ancient legend, passed down from grandparents, says that the town&#039;s Franciscan friars, several centuries ago, were great producers of red wine.

One day, inside the convent they hosted an important person, a bishop. During the banquet, they served him a goblet of wine. The guest, amazed by the excellence of the drink, asked the name of it. One of the monks, inspired by the name of the hill on which the monastery is built and the intense color of the wine (as red as blood), immediately replied, &quot;Blood of Jupiter.&quot; Only over time did the name change to &quot;Sangiovese.&quot;
We can say that it is an honest wine, a true wine, like the people of Romagna. A deep ruby color, a pleasant texture, a very intense aroma (cherry, red fruit, violets, spices) and a strong flavor that keeps the tannins in harmony with everything else.</description>

                                    <description>German wine is synonymous with the Riesling. It’s sweet, fruity, seemingly designed for sipping on a sunny day—or, really, all day. But while Riesling may be the star of Germany’s Mosel and Rhinegau regions, it’s hardly recognized in Franconia. Instead, the vino of choice is Silvaner (the local favorite), Bacchus (known as the “wine for women”), or the Riesling-Madeleine Royal hybrid, Müller-Thurgau—wines so supremely local that Franconia’s signature vessel, the Bocksbeutel, is virtually unseen outside the region, let alone throughout the world. White wines dominate the landscape, at roughly 80 percent of the grapes planted. But the handful of reds grown are uniquely Franconian. A typical Rotling is the Franconian rendition of rosé in which vintners grow red grapes but treat them as if they were white, yielding a deeply fragrant white wine that just so happens to be blushing. Domina, the most common red, is inelegant and unrefined compared to virtually anything out of France, but what the wine lacks in grandeur it makes up for in flavor, with a dark, full body and rich in tannins.

Whatever your tipple, just know that Franconians classify their wine in three ways: New, Classic, and “the Great,” where New wines are for everyday drinking (something like a summertime Bacchus to quench thirst while, say, talking to friends on an old stone bridge and listening to Ed Sheeran covers sung in German); Classic wines encompass the dinner-party table—a delicate Silvaner you’d buy for a birthday or that Müller-Thurgau you got for your birthday and guiltily downed while watching Game of Thrones—and “the Great” wines are your once-in-a-lifetime, I’m-too-afraid-to-open-this-bottle variety: the Picasso of wines, a look-but-don’t-touch.

It may not be Burgundy or Tuscany—certainly not in terms of the spittle required to even pronounce the name—but those hundreds lining the Alte Mainbrücke’s popular watering hole Alte Mainmühle don’t care. Wine here is poured in the German fashion, which means that, like beer, it’ll overflow out of the glass and eventually onto your white top.</description>

Its history dates from the 8th century, when Frankish dukes, converted to Christianity by Irish missionary monks, laid the foundations of massive Marienberg Fortress on the crest of the highest of Würzburg&#039;s many terraced and vine-covered hills.
There is a story about a legendary wine known as the “millennium wine”, harvested in 1540, the time of Shakespeare, Emperor Charles V and Martin Luther.  
The “Jahrtausendwein” is a “once-in-a-millennium” vintage wine, a very valuable Riesling wine from the Würzburger Stein vineyard, Würzburg, Germany of 1540. The year of 1540 is mostly known for its desastrous drought in Central Europe. The drought was an extreme climatic event with diverse effects on natural areas and human communities over elven months.

Due to the desastrious effects of the drought vintners believed their harvest to be lost as many other crops that year.  The vineyards produced mostly shriveled and dried grapes that though produced an extraordinary and delicious wine. The heat created a millennium wine with an extremely high sugar content that was described as “so excellent” that it was preferred to foreign wines. 

When the vintners in Würzburg harvested the so-called Kaiserwein in 1540 the quality of the Würzburger Stein wine was described as the best of the past millennium and is probably comparable to modern-day Trockenbeerenauslese. “It looks like gold in the glass,” described one chronicler the “Jahrtausendwein”.

When the Swedes occupied Würzburg in 1631, they searched in vain for the famous wine. The citizens of  Würzburg though hid and buried the wine in the forest, and unfortunately forgot its location. It took another 52 years to recover the wine that was then stored in the famous “Schwedenfass“, the “Swedish barrel”.

Some bottles of the “Jahrtausendwein” of have survived to this day, for example one is behind glass in the treasury of the Würzburg Bürgerspital zum Heiligen Geist. In 1966 scientists and selected people opened one bottle and determined that the wine was still drinkable, and gave a glimpse of the famous “Jahrtausendwein”.
In 1996, the bottle was returned to Bürgerspital Weingut, and is thought to be the last surviving bottle of this vintage wine and the Guinness World Record stated that it was the oldest bottle of wine in 1976, 1977 and 1978. 
Today, it is safely stored in the wine treasury under lock and key!</description>

The country&amp;rsquo;s favourable geographical and climatic conditions to grow grapes, eventually gave birth to vineyards in the region. There was a time when every other bottle of wine that was consumed in the USSR was produced in Moldova;
it was that popular.

Mileștii Mici, the wine city, is 200 km long!
It holds Guinness Book of World Records for having the biggest wine collection in the world.
The complex features around 2 million bottles of wine!
Visitors need their own vehicles to explore the wine city.
One day guided tours are available for inquisitive wine lovers.
Every street here is named after a grape, like Pinot, Traminer and Riesling, among others.
Close to Mileștii Mici, there&amp;rsquo;s another prominent winery, called Cricova which stretches around 120 km and features extensive network of underground tunnels with an array of wine.
There are pretty wine fountains here too!
The country celebrates &amp;lsquo;National Wine Day&amp;rsquo; every year in the month of October.

Within this period the following possible options are left to the discretion of the producers:
1) 24 months of maturation in wood;
2) 18 months minimum of maturation in wood plus the remaining months in another container;
3) 12 months minimum in wood plus 6 months minimum in bottle plus the remaining months in another container.
In cases 2 and 3, the beginning of the period of maturation in wood can not be extended beyond April 30 of the year following the harvest. Controlled and guaranteed designation of origin wine &quot;Vino Nobile di Montepulciano&quot; cannot be released for consumption before the end of the two years of compulsory maturation, calculated from 1st January of the year following that in which the grapes were produced.
Bottling operations, on the other hand, must be carried out within the wine-making area. However, for the controlled and guaranteed designation of origin &quot;Vino Nobile di Montepulciano&quot;, which does not have the right to the mention &quot;riserva&quot; (reserve), bottling is allowed in the entire territory of the region of Tuscany to wineries that have been bottling this denomination for at least three years prior to the entry into force of the production regulations currently in force.

Characteristics of wines using Albana: the wine obtained from the Albana vine turns golden with intense and fruity aromas and the right balance between freshness and softness. It is particularly suitable for drying, so much so that Albana di Romagna DOCG Passito is among the most appreciated and awarded dessert wines in Italy.</description>

Some of the barrels are located in the dungeons of the former guardhouse, which occupied part of the ground floor of the building. On the occasion of the grape harvest, these lower spaces, where the grapes are gathered for fermentation, are also open to the public: once the vinification process has begun, it is no longer possible to visit them because of the carbon dioxide that develops naturally.</description>

Besides the Welschriesling there are many more grape varities adding to top quality wines such as the Sauvignon Blanc, Weißburgunder (Pinot Blanc), Traminer, Chardonnay (here called Morillon), Muskateller, Ruländer, Sämling, Riesling, Zweigelt and Blauburgunder (Pinot Noir). A unique speciality of Styria is the &#039;Schilcher&#039;, a crisp rosé wine. The &#039;Steirische Junker&#039; is a trademark for the first young white wine of the season, produced by 300 winemakers of Styria and which became very popular over the past few years.</description>

                                    <description>Vitovska is an autochthonous white grape variety present throughout the Carso area, both in Friuli-Venezia Giulia and on the Slovenian side. Its name seems to come from the locality of Vipacco, now in Slovenia (Vitovlje). On the other side of the border it is known as Vitovska Gargania, and has been present in this area since time immemorial. In the national register of vine varieties, as well as in official references to specifications, it is present with the synonym Vitouska. Vitovska is a borderline grape variety, which in the past was often vinified in blends with other grapes, especially with Malvasia Istriana, but which is increasingly being offered for vinification on its own, thanks to the tendency to rediscover forgotten autochthonous grape varieties and the oenological qualities of this variety, which have led to an increasing number of producers offering it for vinification on its own.

Vitovska has compact, pyramid-shaped bunches with spherical, green berries. It is grown in the Karst region, on soils of white-grey rock, clearly calcareous and with a good chalky component. These soils are very fertile, despite the rather barren exterior. The various periods, budding and harvesting, for example, are quite early, and the vine is grown using espalier systems. The grapes have a juicy, tasteless pulp. Despite the neutral taste of the grape, Vitovska produces wines with good personality and depth, with an olfactory range between fruity and herbaceous. The most characteristic recognition is that of Williams pear, with notes of sage on the finish.</description>

In this vast area traditionally more table grapes were produced than wine grapes. Moreover most of the wine production is still used for blending wines or as a base for fortified wines and liqueurs. Because of a rather soft disciplinary and the large area covered, Aleatico di Puglia DOC is not as famous or esteemed as the wines belonging to the other Aleatico DOC appellations, such as Aleatico di Gradoli DOC or Elba Aleatico Passito DOCG. Traditional Aleatico di Puglia is sweeter and more full-bodied than the types from Lazio or Tuscany, mainly due to the fact that the climate in Puglia is considerably drier and warmer. In fact, the name of the region of Puglia comes from the Latin &quot;a pluvia&quot;, &quot;without rain&quot;. Morellino di Scansano DOCG wine, if intended to be qualified with the mention Riserva, must undergo a period of aging of no less than two years, at least one of which must be in wooden barrels. Both types have a modest acidity content. The colour is ruby red, evolving towards garnet with ageing, especially in the Riserva type. The bouquet is intense and complex, with notes of wild berries. In the riserva type there are hints of wood and spicy notes and riper fruit. On the palate the basic type is dry, warm and slightly tannic. The Riserva has a longer persistence.</description>

The young French royal brought as a dowry a vine from the Côte d&#039;Or of Burgundy, the Uva d&#039;Oro (Golden Grape), which found its perfect habitat in the areas of the sandy dunes of the Delta and in the Dossi del Bosco Eliceo to reproduce itself at its best, among the holm oaks and the delta bushes. The particularly humid, foggy and static environment, the strongly brackish air and soil, the constant proximity of the sea and the lack of fresh water have contributed, over the centuries, to the formation of a grape with a very strong character, perfect for the meat and fish dishes of these areas.</description>

                        <title>Holy Wine of Trentino</title>

                                    <description>Maybe not everyone knows the Vino Santo del Trentino, and maybe someone confuses it with other similar wines, but the Vino Santo that we are going to tell you about is a wine from Trentino, which boasts the label Slow Food Presidium.
This special raisin wine of the North is also called &quot;passito dei passiti&quot;, because it is the wine that boasts the longest natural drying process. Tradition dictates that it is made using only Nosiola grapes, of which only the sparse bunches, i.e. those with the ripest berries, well formed and spaced out, must be harvested. The grapes grow only in some old vineyards exposed to the sun, more suitable for such a long drying process. The bunches of grapes are in fact harvested late, in October, and then placed to dry on the so-called arèle, which at one time were made of cane racks, and today are made of thick metal netting, placed in sheltered and ventilated attics.
The constant ventilation, guaranteed by the Garda wind, the Ora, together with the special position of the bunches of grapes, allows for ideal drying, with a drop of up to 80% in weight, also due to the formation of a particular noble rot (Botrytis cinerea) on the grapes.
The drying process continues until the Holy Week of the following spring, when it is finally possible to proceed with the rite of pressing, which traditionally takes place at Easter or thereabouts. This is why it is called Vino Santo. The wine is then filtered and received in spent oak barrels (which are no longer capable of releasing hints of wood into the wine). Just think that from 100 kilos of fresh grapes, you get just 15-18 litres of Vino Santo must. Definitely a precious nectar!
Vino Santo is left to age in small barrels for at least six to eight years, as long as the natural fermentation process can last. After bottling, this wine has a very long life, it can be kept even for fifty years.</description>

It is a very ancient vine, whose cultivation was already known to the Greeks who called it Pictaton, who appreciated its qualities in wine and considered it to come from the southern Adriatic. The Austrians particularly loved this wine for its medicinal properties due to the highly ferrous soil on which the vineyards are cultivated.</description>

                                    <description>In the nineteenth-century cellars of the historic Martini building in Pessione di Chieri, the collections on display are two very distinct.

The first is represented by the Martini Museum of the History of Oenology, inaugurated in 1961, on the occasion of the hundredth anniversary of the Unification of Italy, a collection of extraordinary value, made up of over 600 pieces, over a period of time from the seventh century BC to the present day. The collection is exhibited in 15 rooms and can be divided into two sections. The first seven rooms make up the archaeological area: in the display cases amphorae, vases, filters, cups of splendid workmanship, along a temporal axis that starts from Ancient Egypt, crosses classical Greece and reaches late Latinity.

The second section is instead dedicated to the modern era, from the seventeenth to the twentieth century. There are monumental presses, ceremonial floats, alembic vats; next to them a miscellany of precious objects in silver or crystal, made by manufactures all over the world. The Museum was created from the private collection of Lando Rossi di Montelera, a nephew of the founder Luigi Rossi, and was then enriched and perfected over the years, always keeping up with the times. Intimate and spectacular, the Martini Museum invites visitors to a fascinating journey through time, involving intelligence, emotion and beauty.</description>

The underground cathedrals of Casa Gancia represent an incalculable historical heritage of architecture dedicated to oenology: they have been excavated in the past centuries in calcareous tuff, perfect natural thermal insulation able to maintain a constant temperature of 12-14 degrees, ideal for the processing and aging of great wines.

The crushing of grapes from crates of Chardonnay, Pinot Noir and Moscato, for the production of Metodo Classico Gancia sparkling wines, takes place in suggestive cellars of over 600 square meters, with exposed brick vaults dating back to the early nineteenth century. Here there is the Marmonier Press, with two cages of 4500 kg each, for the pressing of 60% of the grapes in a very soft way, 16 temperature-controlled stainless steel tanks of over 80,000 litres, destined for the fermentation and preservation of Metodo Classico sparkling wine bases for the cuvèe and 300 barriques of 225 litres for the fermentation and maturation of the wine.

In the north of the region, between Dijon and Corgoloin, the vines follow one another like works of art on a strip of land about 20 km long and narrow up to 200-300 m which extends into the Côte d&#039;Or department, known for the famous limestone quarry of Burgundy: it is here that the great Burgundy red wines are produced. The monks who lived in these areas discovered their enormous potential as early as the 10th century, when they classified the area by tracing its boundaries, assigning the parcels their current names and outlining the sensory characteristics of the different wines produced here. As evidence of the past there are still numerous &quot;Clos&quot;, the vineyards of the monasteries completely surrounded by walls. The Côte de Nuits is divided into 33 plots, including those of Gevrey-Chambertin, Chambolle-Musigny, Nuits-Saint-Georges, Vougeot and Vosne-Romanée. The territory also includes the extra-long varieties of Romanée-Conti, La Tâche and La Romanée, the smallest AOC production area in the world with its 8000 square meters, as well as the Premier Cru and Grand Cru.
The territory is dominated by the Jurassic sedimentary rock, which rests partly on granite and gneiss sediments, the origin of which dates back some 250 million years. The Côte de Nuits offers ideal conditions for the cultivation of Pinot Noir because of its calcareous soil, rich in skeleton and particularly permeable, capable of warming up in spring faster than clayey soils. Precisely for this reason, the prized grape varieties of the Premier Cru and Grand Cru grow on the hillside, while the simpler qualities mature downstream.
The quantity of Chardonnay white wines produced in the Côte de Nuits is insignificant, and Pinot noir is the master.</description>

Grape is medium sized, conical and dense. Devin is very plastic, it can grow almost anywhere where there is a suitable environment for vines. Given the high sugar content (which is genetically anchored therein) and high resistance to frost, it is suitable to higher ground. Devin is fertile and very high quality variety. Of all the varieties grown in our country has the highest sugar content of aromatic musts, which are in most grades suitable for the production of wines with special attributes.
Characteristics of the wine: Wine color is straw – yellow, decent aroma is dominated by spicy notes Devine Traminer and geraniums. Honeyed unobtrusive haze to peel ripe grapefruit, good balance of primary and secondary bouquet, delight any lover of wines from aromatic varieties.</description>

                                    <description>Gli anni del regime socialista jugoslavo sono stati duri, ma alla fine hanno anche permesso la sopravvivenza di una viticoltura piccola ma molto interessante, salvaguardando almeno due dei vitigni autoctoni di questa valle che si snoda lungo il fiume Vipava, dall’altra parte del Collio e del Carso. Vini freschi e di carattere, spesso realizzati in biodinamica e con macerazione sulle bucce o in anfora. Vipava Valley è una vallata di una quarantina di chilometri, che da Nova Gorica scende verso sud-est, protetta da rilievi montuosi che corrono paralleli fino a stringersi e sfiorarsi verso Podbreg. Sul lato sud-ovest la terra s’increspa e sale verso i primi contrafforti dell’altopiano del Carso. Dalla parte opposta si stagliano le alture della Selva di Trnovo e la massiccia sagoma calcarea del Monte Nanos, con le sue ripide pareti rocciose. Al centro della Valle scorre il fiume Vipava (Vipacco in italiano).Il clima della Valle è una fusione d’influssi mediterranei, continentali e alpini, che creano condizioni molto particolari. Le estati sono calde e secche e gli inverni, miti nel fondovalle, ma con abbondanti nevicate sui vicini rilievi. I versanti coltivati a vigneto sono sempre ben soleggiati e costantemente battuti dai venti. Le fredde raffiche di Bora soffiano da nord-est scendendo veementi dai monti fino a raggiunge i 200 chilometri orari. Nei rari momenti di tregua, da sud-ovest risale il Mornik, un vento caldo che contribuisce a rendere il clima mite e temperato. La Vipava Valley è una vera culla naturale per la vite, che anche grazie a escursioni termiche tra il giorno e la notte, porta a maturazione grappoli dagli aromi intensi.Nella Valle della Vipava la viticoltura ha origini antichissime, che risalgono alla dominazione romana e forse addirittura ai tempi dei Celti. Il primo trattato sul vino in lingua slovena è stato scritto nel 1844 proprio da un sacerdote della Vipava: Matija Vertovc. Quasi tutti i viticoltori ne conservano gelosamente una copia, come fosse una bibbia del vino. Nel 1873 a Slap è stata creata la prima scuola di viticoltura e nel 1894 è nata la Cantina Cooperativa di Vipava: il tessuto produttivo è costituito da piccole aziende familiari con pochi ettari di vigna, eredità delle vecchie fattorie rurali della Jugoslavia di Tito. In Slovenia le cantine indipendenti hanno una storia recente, che risale alla fine egli anni ’80. Durante il regime socialista, le uve erano conferite alle cantine sociali.La zona è particolarmente vocata per le uve a bacca bianca, che ancora oggi rappresentano la percentuale più alta e qualitativamente più interessante della produzione. I vitigni storicamente più diffusi sono ribolla gialla, malvasia, zelèn, pinela, e gli internazionali sauvignon blanc, chardonnay, riesling italico e pinot grigio.I vitigni a bacca rossa sono stati introdotti nel corso nel Novecento e tranne rare eccezioni, non raggiungono il livello dei bianchi.
