The raw meat all’albese, more simply called Albese or Albèisa in Piedmontese, is another typical regional appetizer originally from the Langhe but commonly eaten throughout Piedmont. Slices of raw Fassone veal are thinly sliced with a knife and seasoned with lemon juice, oil, garlic, salt and pepper.
