A succulent dish with an intense and unmistakable fragrance, thanks to the presence of aromatic herbs such as piperna selvatica ischitana, a kind of wild thyme that grows spontaneously on the island and that is used for cooking rabbit.
The rabbit is cooked in an earthenware pot with tomatoes, a whole head of garlic and a generous sprinkling of Biancolella di Ischia, a typical island wine made from white grapes. Not to be missed if you go to Ischia!
