A typical dish, definitely worth trying in winter, is polenta on the schiazza (stone or wood). Polenta on the schiazza has been the staple food of peasants for centuries and it is said that putting the pot on the fire for polenta was the first operation of the day. Today, as in the past, polenta sulla schiazza is served with pork chops, sausages, snails, or with codfish or vegetables.
