Polenta all’abruzzese is a very rich and tasty recipe that is traditionally prepared on the coldest winter days.
The recipe for polenta all’abruzzese is made by frying the bacon with sausages and onion, add the tomato and use this sauce to accompany the polenta cooked separately.
Polenta d’Abruzzo is different from the polenta that is prepared in the North, it is served soft and as we have said with meat sauce, often sausage and red meat. In some areas it is also served by adding sautéed onion and/or borlotti beans to the sauce. There are those who serve it with rabbit meat, duck meat, mixed meat or with wild boar meat, the latter more in mountain areas or in mountain huts.
