Pisarei e fasò alla Piacentina

A recipe that has ancient origins: in fact, the pasta format is said to have originated in the Middle Ages with ingredients that farmers and monks had on hand. In fact, it seems that pisarei were offered to pilgrims from all over Europe passing along the Via Franchigena. Also one of the hypotheses with respect to the origin of the name would see it derive from the Spanish "pisar" meaning to crush, the gesture to create the typical central hollow perfect for collecting the sauce. Over time, beans and bacon were added to the pisarei to make the dish even more nutritious. And they are still prepared this way today.
