Caponet, also called pèscòi, are another typical appetizer of the region that you absolutely must try. Caponets are rolls of Savoy cabbage cooked in the oven and stuffed with a filling made from minced pork meat and crumbled fresh sausage cooked with onion, salt and pepper, breadcrumbs, egg, grated cheese and, sometimes, with the addition of diced lard.
