Piedmont: Flours from the Vermenagna Valley

The food flours made from corn, soft wheat, buckwheat and chestnuts from the Vermenagna Valley share the peculiar characteristic of being stone milled using a water-powered mill. The municipal archives of Robilante, in the province of Cuneo, contain historical documentation regarding these products: the first license to produce flour using the proposed techniques dates back to 1825.
