A cheese made of whole raw cow’s milk from the Bruna Alpina breed. It has a fairly regular cylindrical shape and weighs between 2-3 kg. The paste is a deep straw-yellow colour, sometimes golden, with marked amber-coloured veins; the eyes are small and sparse. The rind is rustic, rough, colonised by dark grey moulds which characterise its colour, and the consistency is hard. The flavour is pronounced and piquant. It is produced throughout the year.
