Pantelleria Passito

A perfect synthesis of the territory in which Passito di Pantelleria was born, the island of Pantelleria, this extraordinary nectar has antique golden yellow tones with elegant amber veins. Hints are of candied fruit, dried figs, honey, cinnamon and orange blossom.A complexity of sensations supported by a generous sweetness and refined balance. On the island of Pantelleria, an extreme outpost in the heart of the Mediterranean, the vine was introduced by the Arabs to produce raisins and occupies much of the arable land. The raising of the zibibbo vine takes place, unsupported, in small basins dug into the ground, where the clusters grow sheltered by foliage. After drying, the berries are added to the must of fresh fermenting grapes. By means of special vinification and aging techniques in steel and in the bottle, an excellent meditation wine is finally obtained, perfect in combination with chocolate, ricotta, almond desserts and blue cheeses.
