During a visit to Vercelli you can not fail to taste the panissa, the typical dish that, despite the name, has nothing to do with the homonymous Ligurian. Zero at all. Panissa in Vercelli is a dish made with rice to which beans, salam d’la duja (a local sausage) and pork rind are added. A sort of risotto, in short… but not really. Delicious!
