Nettles soup
To collect the nettles, use a pair of leather gloves; use only the stems and then tear off all the leaves of the nettles, removing the filaments that are adherent to the stems as they are collected. After washing the stems, break them up. Put a few tablespoons of olive oil in a pan and fry the chopped bacon and sliced onion; as soon as it is browned, add the tomatoes cut into fillets and after about 10 minutes put the nettles stalks in the pan. Season with salt, stir and cook in a covered container adding hot water from time to time. As soon as it is ready, serve the soup, still hot, accompanied by croutons of bread.
