Samosas are fried, crispy, vegetable-filled dumplings and are a typical Indian street food. There are many variations and recipes of this delicious finger food and, depending on the area where they are eaten, you can find different fillings: in some cases the minced meat mixed with potatoes appears. At home you can easily prepare them with the vegetables you have available: carrots, cauliflower or zucchini depending on availability. The recipe for samosas is widespread throughout central and southern Asia, but there are variations in all countries of the Middle East and the Horn of Africa. Size and filling vary depending on the areas of preparation, but the tetrahedral shape remains a constant. In this recipe we used ajowan, a very rare spice similar to thyme but with a slightly bitter and spicy taste. In Indian cuisine, samosas are served with mango chutney or mint and coriander.
