Morzello, the Calabrian sandwich

This tasty sandwich stuffed with spicy sauce, tripe and offal, is the typical dish of workers in search of energy. Morzello, also known as Morzeddhu, Murseddu or Morsello is an ancient peasant dish, typical of the city of Catanzaro and its province. Like many traditional dishes, the history of this dish is curious: it is said that this preparation was invented during the Christmas holidays by a woman who, widowed, in order to maintain her family cleaned up the courtyard where the animals were slaughtered for the families of the wealthy. As they say, she made a virtue of necessity, having nothing to cook for the holidays prepared a meat soup with offal discarded from the slaughter and destined for the landfill. And so Morzello was born, so called because it was made with offal reduced to small pieces (in Catanzaro dialect "morzha morzha"). Over time, the Morzello spread as a preparation in the taverns of the city and became a hearty snack for workers who enjoyed it with the pitta, a typical homemade bread that was stuffed with this succulent sauce offal Absolutely try it!
