Risotto with saffron is a very tasty and fragrant traditional first course, typical of the Milanese cuisine! based on rice, vegetable broth and saffron; the wonderful ancient spice that gives the risotto the classic golden yellow colour and an unmistakable flavour. Like every classic recipe there are many versions. There are those who add a spoonful of sauce in the soffritto; those who use white wine and other red wines; many confuse it with Risotto alla Milanese, which is prepared with ox or beef marrow and is served with ossobuco cooked separately.
