Sicilian slush or simply slush, like ice cream, is a refreshing food. In its basic recipe, it consists of water, sugar and lemon (lemon granita), but alternatively, the lemon can be replaced by roasted almonds, coffee or other essences.
It can also be prepared at home, taking care to dissolve the white of the egg in the mixture to prevent it from freezing.
It is served in transparent glass glasses, and goes well with the typical Sicilian brioche prepared with egg and shaped with a hemispherical base topped by a small ball (like a cupola).
In Sicily ‘a granita ‘ca brioscia is often appreciated as an excellent breakfast. Especially the coffee granita, a speciality of the city of Messina, usually served in a glass in which the lower half is made of granita and the remaining part covered with cream, strictly fresh.
Catania, on the other hand, is specialized in making almond granita.
