The minestra maritata is a very tasty and rich soup typical of the Campanian cuisine, and in particular of the Neapolitan one, inevitable on Christmas tables but prepared in general during the winter period.
The name of minestra maritata, that is married, derives from the perfect combination of the various ingredients that make it up and that are, in fact, perfectly mixed together. Like every regional recipe, minestra maritata also boasts numerous variations, different from city to city and even from house to house. It is generally made with mixed vegetables such as escarole, broccoli, cabbage, torzelle, chicory and aromatic herbs. Then pork or chicken, to which fat is added, such as lard.
