Among the typical dishes of Campania, we cannot but include the omelette of macaroni.
Traditionally, when pasta with meat sauce was left over, mothers and grandmothers had no doubts about what to do, indeed it was not uncommon to cook a larger quantity of pasta than expected, in order to make a nice omelette of macaroni. This is a summer dish that today, as in the past, is used as take-away food, and prepared on the occasion of a day at the beach or a holiday to be spent away from home. The macaroni or pasta omelette is still a very common preparation, also for its ability to be enjoyed without being heated.
