Liquor "Concerto": Secret of the Amalfi Coast

The liqueur "Concerto" is one of the oldest rosoli on the Amalfi Coast. It was invented in Tramonti (SA), one of the thirteen Municipalities that make up the Divine Amalfi Coast, by Sister Cecilia, who in 1600 masterfully created this excellence in the Convent of Tramonti, putting together and in harmony many spices, herbs and lemon peels; from these combinations of ingredients, the name Concerto was born. The Convent of Tramonti, where Sister Cecilia lived, was founded in 1600 as a boarding school for the daughters of the nobility and a few centuries later, it was destined to welcome abandoned or needy girls. The spices used for the Concert were known on the Amalfi Coast since the time of the Maritime Republic of Amalfi, which had imported them from the East during its period of greatest commercial development along the Mediterranean Sea. Today it is possible to find this liqueur in Tramonti (SA) at some Agriturismo, some laboratory or some private person, who still use the secret recipe of Sister Cecilia, handed down from mother to daughter and jealously guarded. Dark in color with an alcohol content of about 30 °, its preparation, very long and laborious, provides for about 40 days the infusion in alcohol of lemon peels sfusato amalfitano, herbs and spices, including wild fennel, cloves, nutmeg, cinnamon, aromatic calamus, coriander, red sandalwood, aniseed vulgar, star anise, juniper berries, barley, coffee, etc.. After the infusion period, the syrup is prepared and the liqueur processing is completed. It is bottled and stored in a cool place, allowing it to mature for at least 2 months before consumption. Used in ancient times as a panacea against all ills (bellyaches, headaches, soothing bronchial diseases, etc.), still today, especially the elderly of the place, still believe in its magical-therapeutic qualities and even aphrodisiac properties. The harmony of flavors makes it suitable to be used as an aperitif, digestive and for the preparation of many culinary specialties of the Amalfi Coast. Still today the tradition of Tramonti wants the Concert to be offered by the families to the guests "na pres’ é cunciert" also as a sign of continuity with the past.
