Lardiata Neapolitan recipe

Ziti napoletani, maccheroni lardiati, paccheri lardiati or even mezzanelli spezzati allardiati. The lardiata or allardiata is one of the tastiest and most substantial first courses of Neapolitan cuisine, absolutely to try in one of the typical restaurants of Campania or to make at home. The ingredients are simple: pasta, cherry tomatoes and belly lard, a clove of garlic, chilli pepper, and a generous sprinkling of grated pecorino cheese. The lard must be reduced to a cream with the help of a good knife and the cherry tomatoes cooked to perfection. More than a first course, it is a real poem for the palate.
