Lamprais

Lamprais is a traditional Sri Lankan dish influenced by Dutch colonization. It is a hearty and flavorful meal consisting of a variety of ingredients wrapped in banana leaves and slow cooked in the oven. The preparation of Lamprais requires some patience and culinary skill. The base of the dish is a mixture of steamed rice, spiced with cinnamon, cumin and cloves. This rice is then enriched with a selection of meats, usually lamb, chicken or beef, which have been previously marinated and stewed with spices such as turmeric, coriander and pepper. Vegetables, such as peas, beans, and carrots, are also added to give the dish a fresh, textural note.A key component of Lamprais is Dutch sausage called "sudda," which is traditionally included in the dish. In addition, a hard-boiled egg is often added to complete the meal.Once all the ingredients have been carefully arranged on a banana sheet, it is wrapped tightly and baked slowly in the oven. This process allows the flavors to mingle and blend, creating a rich and aromatic dish.Lamprais are often served with a sweet onion sauce called "seeni sambol" and sour cucumber salad to balance the intense flavors of the main dish. You can enjoy Lamprais at various restaurants, inns or caterers specializing in traditional Sinhalese cuisine in Sri Lanka. If you want to enjoy an authentic version of Lamprais, I recommend looking for local restaurants in major cities such as Colombo, Negombo, Galle or Kandy, which offer traditional Sri Lankan dishes.
