The koch is a kind of soufflé made with whipped butter and sugar, breadcrumbs, eggs and other ingredients of your choice, such as flavourings, pieces of fruit, semolina or rice. The semolina koch is certainly of Austrian origin, in Trieste it is called "koch de gries" (from the German kochen/gekocht which means cooked and gries (grieß) which means semolina) and it is a cake of simple preparation: butter, egg yolk, sugar and raisins are added to the semolina boiled in milk. The white of the eggs, beaten until stiff, is added afterwards, thus obtaining a mixture similar to that of soufflés, and in fact there are those who call it Auflauf.
