Il salame d’asino

Donkey salami is a sausage made from donkey meat and pork belly. Oral tradition attests to the fact that donkey salami is widespread in various parts of Piedmont, especially in those areas where they were mostly used as pack animals and at the end of their careers were slaughtered to make salami.
