Frico friulano is a recipe originating in Friuli, where potatoes, onions and Montasio cheese are the ingredients of this delicious sort of potato pie that can also be served as a single dish. There is a soft version and a crunchier one. Frico should not be made with grated blanched potatoes, but rather cooked and well boiled, various types of cheese should be used and it should be eaten hot, strictly accompanied by polenta, never cold!
