Fried gnocco

The first typical dish of Emilia is definitely the gnocco fritto with salami. In reality, this specialty changes name according to the province, in Parma for example it is called torta fritta, but the substance does not change. It is a mixture of flour, water, salt, milk and lard, fried and served with a generous plate of cold cuts and cheese. Those with a sweet tooth can also enjoy it with lard.
