Cappelletti, or caplit, in broth are a traditional Emilian dish deeply rooted in the Ferrara tradition. Their characteristic shape boasts mythological descent, because it is said that they represent the navel of Venus, the goddess of beauty; enclosed in delicate pastry, the meat and parmesan cheese is the exquisite filling.
Christmas dish par excellence, the caplit, differ from the more common tortellini both in form and substance.
Tradition has it that each family, in preparing the "batù" (the tasty meat filling), follows the ancient recipes handed down from generation to generation, which the cook jealously preserves and improves with experience.
