Cutlet bolognese style

Cotoletta alla Bolognese, a very tasty second course with a base of breaded veal loin and garnished with prosciutto and grated cheese. A further note of flavor is given by the meat broth with which the cutlet is faded and which is then transformed into a delicious reduction, as an accompanying sauce.
