The fried Christmas tortelli are typical sweets of the Emilian tradition of Modena and Reggio Emilia in particular. They are filled crescent-shaped sweets that are prepared throughout the festive period.
Obviously, as always happens with regional specialties, each family keeps its own recipe. Traditionally, however, Emilian fried tortellini are made with two types of filling: the so-called " Christmas pesto" or custard. We propose the latter.
The dough is a kind of leavened shortcrust pastry that remains very soft after frying. Sink your teeth into these soft dumplings and find a delicious cream is an irresistible pleasure. The recipe is not complex and a couple of tricks are enough to obtain unforgettable fried tortelli with cream: let the custard cool perfectly before using it and fry the tortelli in plenty of oil, they should float.
