Toma di Lanzo is a whole or semi-skimmed raw cow’s milk cheese, soft or semi-hard, with a medium maturing, cylindrical shape with flat sides and straight or slightly convex sides. Weight from 3,0 to 7,0 kg, heel from 5,0 to 15,0 cm, diameter from 20,0 to 40,0 cm. The rind is smooth and straw-coloured/greyish, and there may be a typical depression on one side due to the traditional moulding technique, which uses only the natural fibre cloth without a mould. Straw-yellow paste with small, diffuse eyes, consistency between soft and semi-hard. Characteristic aroma, harmonious and delicate, linked to the seasonal varieties of flora, becoming more intense and fragrant as it matures.
